I've just began picking up on the French defence, but I didn't know anything other than the "boring symmetrical line" you showed. Out of curiosity, I've came across this line in my personal random exploration:1.e4 e6 2.d4 d5 3.exd5 exd5 4.Bd3 Bd6 5.Nf3 Nf6 (yes, the boring line!) But I thought 6.Qe2+ looks interesting. If Black blocks with 6…Qe7, then after 7.Qxe7+ Bxe7, arguably Black has made some concession by retreating the Bishop from the more optimum d6 square to e7. If Black plays 7…Kxe7, position would just be a mess (White is still slightly better, due to Black's King stuck in the middle, I suppose.) If 6.Qe2+ Be6, 7.Ng5 can force a Knight-for-Bishop trade at the expense of a few moves. Not sure if you have views on this line?
